Twin Peaks-Inspired Coffee-Flavored Butter Cookies, 2 Ways

(Yes, I clipped this recipe as a teenager and fully said, “I’ll see you again in [almost] 25 years.”)
This recipe makes two flavors. It’s easier to mix in flavorings like spices and extracts with a mixer paddle or a handmixer, so I included the coffee with the dry ingredients. If you’re making half without coffee, set aside the plain half and then use your stand mixer or a spare hand-mixer to beat in the ground coffee so it distributes evenly.
For the dough:
Whisk
- 1 egg
- 1 egg yolk
- 1/2 tsp salt
- 1 tsp vanilla extract
in a small bowl and set aside.
In the bowl of a stand-mixer using the paddle attachment, or using a hand-mixer, cream together
- 16 oz (2 sticks / 455 g) unsalted butter, at cool room temperature
- 1 cup (7 oz/ 200 g) granulated sugar
Add egg mixture and mix on low speed until incorporated.
Add
- 2.5 cups (11 oz, 313 g) all-purpose flour
- 2 tsp finely ground coffee (optional, decaf is okay too) – see note above
and mix on low speed until a smooth dough forms.
Divide dough in half and stir in flavorings:
Half 1: The Agent Cooper: dried cherries, chocolate, coffee
Stir in
- 1/2 cup (2.5 oz / 70 g) tart or sour dried cherries, chopped
- 1/2 cup (3.2 oz / 90 g) dark chocolate (~70%) chunks
Set aside.
Half 2: Cinnamon Citrus Coffee
Stir in
- 1/4 cup (1 oz / 28 g) minced candied citrus (I like yuzu or orange)
- 1 tsp cinnamon
Roll each dough into a ~9 (23 cm) inch log, then roll in plastic wrap.
Wrap in cling wrap and set logs in freezer; chill until solid, about 30 minutes. (You can also refrigerate for 2-3 hours instead.)
Logs will keep for 2 months double-wrapped – I usually place the log in a plastic bag to keep out freezer smell/burn.
When ready to cook, slice cookies on a slight angle, about 1/4 inch thick. Bake at 375° F (190° C) for 12-14 minutes. Use the upper-middle and lower-middle racks and switch halfway through to cook two cookie sheets at a time.
Cool on a wire rack. Store in an airtight container for about 1 week.
